Darjeeling First Flush Spritz

A chilled, floral spritz built on a Darjeeling First Flush concentrate, brightened with elderflower and lemon, then topped with sparkling water for a light, effervescent pour.
Ingredients
- 1.5 tablespoons Darjeeling First Flush loose leaf tea
- 1 cup filtered water (175°F to 180°F)
- 1 teaspoon elderflower syrup (or a light honey)
- A splash of fresh lemon juice
- 1 cup chilled sparkling water or tonic
- Garnish: thin lemon wheels and edible flowers or fresh mint
Instructions
- Heat the water to 175°F to 180°F and steep the Darjeeling leaves for 3 minutes. Strain the tea and stir in the elderflower syrup and lemon juice while it's still warm, so they dissolve evenly.
- Place the concentrate in the fridge until fully chilled. Starting from a cold concentrate keeps the ice from watering the drink down once it's built.
- Fill two glasses with ice, pour the chilled tea concentrate over the top, and top with sparkling water. Give it a gentle stir, then garnish with a lemon wheel. Adding the sparkling water last keeps it from going flat before you drink it.
