Beyond the Cup: Make Something Tasty with This Assam Black Tea
Yummy Yam Quiche
Serves 6 to 8
Assam Grand Estate Organic Black tea gets ground fine and blended right into the yam filling, with a sprinkle of the same tea over the melted cheddar on top.
Ingredients
- 2 tsp Assam Grand Estate Organic Black tea, finely ground and divided
- 1 large yam, baked and cooled
- 1 egg
- Frozen store-bought pie crust
- 3 tbsp cream
- 1 tbsp flour
- 1/4 tsp each salt and pepper
- 1 cup grated cheddar, divided
Instructions
- Preheat oven to 375°F. Meanwhile, place the frozen pie crust on the counter to bring it to room temperature.
- Place the tea in a blender or spice grinder to create a fine powder. Set aside. Cut the baked yam in half and spoon out the flesh, discarding the skin.
- To make the filling, combine the cooked yam, egg, cream, and flour in a blender. Add 1 tsp of the ground Assam tea and the salt and pepper. Blend well to create a smooth base. Add 3/4 cup of the cheese and pulse to combine, being careful not to purée.
- Pour the filling into the prepared pie crust.
- Place the quiche on a baking sheet and bake for 35 to 40 minutes, or until the filling is set and golden brown.
- Just before serving, top with the remaining shredded cheddar and a sprinkling of the ground tea. Bake at 400°F for 3 to 4 minutes, just to heat through and melt the cheese. Serve warm.
