We tell everyone the same thing about these pearls: use two or three for a cup, then steep them again, up to three times in all. Pouring them out after one cup is money down the drain, and the second and third steeps are often the ones people like best, once the pearl has fully opened.   • How to brew it hot

    Use 2 to 3 pearls per 8 ounces of water at 175 to 180 degrees. Steep 2 to 3 minutes, and steep the same pearls up to three times. Lower water temperature keeps green tea from turning bitter.

  • How to make iced tea

    Use 4 to 6 pearls per 8 ounces of water at 175 to 180 degrees. Steep 2 to 3 minutes and pour over a full glass of ice. The extra leaf covers what the ice waters down.

  • How to cold brew

    Use 3 to 4 pearls per 8 ounces of filtered water.
    Steep in your fridge for 3 to 6 hours.
    Strain out the leaves and enjoy!

Beyond the Cup: Make Something Tasty with This Organic Jasmine Pearl Green Tea

Jasmine Mint Elixir

Serves 1

A sparkling, floral refresher where jasmine pearls and peppermint are steeped low and slow, then topped with fizz for a bright, delicate sipper.

Ingredients

  • 8-10 Jasmine Pearls
  • 1/2 tbsp dried peppermint
  • 4 oz water (heated to 180°F/82°C—since it's a green tea base, keeping the water slightly below boiling prevents bitterness)
  • 1 tbsp simple syrup
  • 3 oz sparkling water
  • Ice cubes
  • Fresh mint sprig or edible flowers (for garnish)

Instructions

  1. Steep the jasmine pearls and mint in the 4 oz of hot water for 3 minutes.
  2. Strain the liquid into a small bowl or measuring cup, and immediately stir in your sweetener while the tea is still warm so it dissolves completely.
  3. Let the mixture sit for a moment to reach room temperature (you can pop it in the fridge for a few minutes if you're in a rush).
  4. Fill a tall glass with plenty of ice. Pour the jasmine-mint infusion over the ice until the glass is about 3/4 full.
  5. Top with the sparkling water.
  6. Give it a gentle stir and finish with a fresh sprig of mint or a few dried jasmine blossoms on top.
