Beyond the Cup: Make Something Tasty with This Organic Jasmine Green Tea
Berrylicious Jasmine Scones
Makes about 8 scones (estimated)
Ground jasmine green tea leaves work their way into a buttery scone dough studded with frozen blackberries and raspberries, finished with a coarse sugar crust.
Ingredients
- 1 tbsp jasmine green tea leaves
- 1.5 cups unbleached all-purpose flour
- 1/2 cup almond flour
- 1/4 cup sugar
- 1/4 tsp kosher salt
- 1 tbsp baking powder
- 6 tbsp cold unsalted butter, cut into small pieces
- 4 oz frozen blackberries
- 4 oz frozen raspberries
- 3/4 cup plus 2 tbsp heavy cream
- Coarse sugar, to top
Instructions
- Heat oven to 375°F. Line a baking sheet with parchment.
- Place jasmine tea leaves in a food processor, and process to a fine grind. Add the flour, almond flour, sugar, salt, and baking powder to the food processor bowl. Pulse to blend all dry ingredients.
- Add in the butter and pulse until the mixture resembles wet sand. Pour three quarters of a cup of the heavy cream over the mixture and pulse until dough starts to come together. Turn dough into a bowl and fold in berries.
- Transfer the dough to a heavily floured work surface and pat it into a 1-inch-thick square. Transfer to the parchment-lined baking sheet. Refrigerate for 2 to 4 hours. When ready to bake, remove the scones from the refrigerator, brush the tops with the remaining 2 tbsp of heavy cream, and sprinkle with coarse sugar.
- Transfer to oven and bake for 20 to 25 minutes, or until tops and bottom edges start to turn golden. Cool scones on a wire rack before serving. Enjoy!
