Not all black pepper is the same, and Tellicherry is the clearest proof. These come from the Malabar Coast of Kerala and are left on the vine longer than standard pepper, so more aromatic oils develop. Where ordinary pepper tastes sharp and flat, Tellicherry is fuller and fruitier with a finish that lingers. If you've only used pepper from a grocery-store tin, this tastes like a different spice.

If you came into the store and asked us about the different peppercorns we carry, here's the TED talk you'd hear:

White and black pepper come from the very same vine, the difference is all in the timing and the processing.

Black peppercorns are the unripe berry, dried skin and all, which is where it gets that bold, piney, citrusy punch.

White peppercorns are the fully ripened berry, soaked until the skin slips off, leaving just the pale inner seed. Losing that skin mellows out the sharp, bright notes and leaves something earthier and smoother, with a clean heat.

So black pepper is the "full orchestra" of warm, woody, citrus notes and white pepper is a narrower, sharper, more focused flavor.

Four Peppercorn Blend: the black, green, white, and pink together give you a brighter, layered flavor that really shines sprinkled over a finished steak or salad. Beware of possible nut allergies with the pink peppercorns.

  • What to use it on

    Crack it generously over a finished steak or grilled fish right before serving.

    Use it in cacio e pepe, where the pepper is the star of the dish.

    Add it to a simple vinaigrette with good olive oil and lemon.

    Grind it over roasted potatoes or vegetables straight out of the oven, or finish fresh tomatoes, burrata, or pasta with a generous crack. Don't be shy with it anywhere you'd normally reach for black pepper.

  • How the pros use it

    Add freshly cracked Tellicherry pepper at the very end of cooking instead of the beginning. For steaks and grilled vegetables, crack the peppercorns coarsely rather than grinding them fine, so you get bursts of flavor in every bite.

Put Whole Black Peppercorns To Work

Crunchy Pickles

Makes 2 quart jars

If you've never tasted Tellicherry peppercorns before, these crunchy pickles let their flavor shine.

Ingredients

  • 10 pickling cucumbers
  • 4 to 5 garlic cloves, peeled whole
  • 1 tbsp Tellicherry peppercorns
  • 1 tbsp yellow mustard seeds
  • 4 bay leaves
  • 2 tbsp kosher salt
  • 1 tbsp apple cider vinegar
  • 1 tbsp dill seed
  • 6 cups spring water
  • 2 mason jars, 1 quart size

Instructions

  1. Divide the cucumbers, garlic, peppercorns, mustard seeds, bay leaves, and dill seed evenly between the jars.
  2. Combine the water, salt, and vinegar to make the brine.
  3. Pour the brine into the jars, making sure the cucumbers stay fully submerged.
  4. Seal and let ferment for 4 to 5 days until the brine is cloudy and the pickles are ready.
  5. Enjoy.
