Smoked Paprika Potato Salad

Serves 6

If you've never cooked with smoked paprika before, this potato salad is an easy place to start.

Ingredients

  • 2 lb small Yukon Gold potatoes
  • 1/2 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 2 red bell peppers, grilled, peeled, seeded, and diced
  • 2 cloves garlic, chopped
  • 1 tbsp champagne vinegar
  • 1 tbsp Spanish smoked paprika
  • Canola oil
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. Boil the potatoes until just tender, then halve them.
  2. Blend the mayonnaise, mustard, peppers, garlic, vinegar, paprika, and seasonings until smooth.
  3. Grill the potatoes until lightly browned.
  4. Toss the warm potatoes with the smoked paprika dressing, fold in the parsley, and season to taste.
