Put Hungarian Paprika To Work
Hungarian Chicken Paprikash
Serves 8 to 10
If you've never cooked with Hungarian sweet paprika before, Chicken Paprikash is the perfect place to start.
Ingredients
- 3.5 lb chicken thighs and drumsticks
- 2 tbsp butter
- 1 sweet onion, chopped
- 3 garlic cloves, minced
- 2 tbsp flour
- 3 tbsp sweet Hungarian paprika
- 2 1/2 cups chicken broth
- Salt and pepper, to taste
- 3/4 cup sour cream (for roux)
- 1 tbsp flour (for roux)
- Splash of water (for roux)
Instructions
- Season the chicken with salt and pepper and sear until browned.
- Remove the chicken. Saute the onions until translucent, then add the garlic.
- Stir in the flour, paprika, and tomato paste.
- Add the chicken broth, return the chicken to the pan, cover, and cook until the chicken is cooked through.
- Mix the sour cream, flour, and water. Temper with some of the hot sauce, then stir it back into the pan and bring just to a gentle boil.
- Serve with noodles, potatoes, or your favorite grain.
