Ingredients

  • 20 to 25 cherry tomatoes, halved
  • 2 ripe avocados, cut into 1-inch chunks
  • 1 large red onion, thinly sliced
  • 2 cups arugula leaves
  • 1 tsp ground cumin
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh lime juice (vinaigrette)
  • 2 tbsp rice wine vinegar (vinaigrette)
  • 1 tbsp local honey (vinaigrette)
  • 1 tbsp cumin seeds, lightly toasted (vinaigrette)
  • 1/4 cup fresh cilantro, chopped (vinaigrette)
  • 1/4 cup olive oil (vinaigrette)
  • 1/4 cup canola oil (vinaigrette)
  • Salt and pepper, to taste (vinaigrette)

Instructions

  1. Whisk together the lime juice, vinegar, honey, ground cumin, cilantro, and toasted cumin seeds.
  2. Gradually whisk in the oils until emulsified. Season with salt and pepper to taste.
  3. Gently toss with the tomatoes, avocados, onions, and arugula. Serve immediately.
