Slow Cooker Thai Peanut Chicken

Chicken and vegetables slow-cooked in a peanut-coconut sauce built on Crazy for Thai Spice Blend.

Ingredients

  • 1 1/2 lb boneless chicken thighs, cut into 1-inch cubes
  • 1 small yellow onion, quartered
  • 1/2 red and yellow bell pepper, diced
  • 8 oz shiitake mushrooms
  • 1 tbsp Crazy for Thai Spice Blend
  • 2 to 3 tbsp peanut butter or your favorite nut butter
  • 1 tbsp reduced sodium soy sauce
  • 1 tbsp fish sauce
  • 1 to 2 tbsp cilantro, chopped
  • 1 tbsp Thai basil
  • 1 jalapeno, chopped (optional)
  • Sauce:
  • 1 can coconut milk

Instructions

  1. Mix the sauce ingredients together and pour into the crock-pot.
  2. Add in the chicken and vegetables. Stir until everything is coated well.
  3. Cook on low for 4 to 5 hours.
