Others come in specifically asking for peach, and this is the rooibos we point them to first if they tell us they don't want caffeine. Either way, it's usually the tea that gets someone curious about rooibos to actually try it.

  • How to brew it hot

    1 teaspoon per 8 oz, steeped at 212°F for 5 to 10 minutes. Full heat pulls out the deepest peach and rooibos character.

  • How to make iced tea

    2 teaspoons per 8 oz, same temperature and time, poured over a full glass of ice. The extra leaf keeps the peach from thinning out over ice.

  • How to cold brew

    Use 1.5 teaspoons of loose leaf tea per 8 ounces of filtered water.
    Steep in your fridge for 10 to 14 hours.
    Strain out the leaves and enjoy!

Beyond the Cup: Make Something Tasty with This Peach Rooibos Herbal Tea

Peach Rooibos & Ginger Shrub

Makes 1.5 cups

A strong Peach Rooibos and ginger infusion simmers with cane sugar and apple cider vinegar into a tart, deeply flavorful shrub for making your own custom soda.

Ingredients

  • 3 tbsp Organic Peach Rooibos loose leaf
  • 1 cup boiling filtered water
  • 1/2 cup organic apple cider vinegar, raw and unfiltered
  • 3/4 cup organic cane sugar
  • 2 thin slices of dried ginger root

Instructions

  1. Create the Infusion: Pour boiling water over the Peach Rooibos leaves and dried ginger root, steep for 10 minutes, then strain out the solids to yield about 3/4 cup of strong tea. The longer steep concentrates both the peach rooibos and the ginger into a bold base for the shrub.
  2. Simmer the Shrub: In a small saucepan, combine the brewed tea, apple cider vinegar, and cane sugar, warming gently over medium heat just until the sugar is completely dissolved without boiling. Keeping it below a boil preserves the vinegar's bright acidity instead of cooking it flat.
  3. Bottle and Age: Remove from heat, let cool to room temperature, then pour into a clean glass bottle and refrigerate for at least 24 hours. The resting time is what lets the peach, ginger, and vinegar flavors meld into a rounded shrub.
  4. To Serve: Mix 1 to 2 tablespoons of the peach-ginger shrub into a glass of ice-cold sparkling water for a crisp, tart, and deeply flavorful custom soda.
