Red Raspberry Leaf Honey Scones
Makes 8 scones
Tender, buttery scones made with a red raspberry leaf-infused cream — a cozy bake with a delicate herbal note.
Ingredients
- 2 tbsp Tea & Turmeric Red Raspberry Leaf
- ½ cup heavy whipping cream, divided
- 2 cups all-purpose flour (240g)
- ⅓ cup granulated sugar (67g)
- ¼ tsp baking soda (1g)
- 2 tsp baking powder (8g)
- ½ tsp salt (3g)
- ½ cup frozen unsalted butter, grated (113g)
- ⅓ cup plain Greek yogurt (80g)
- 1 large egg
- 1 tsp vanilla extract (4g)
- 1 tbsp heavy cream, for the tops (optional)
- Coarse sugar, for the tops (optional)
Instructions
- Warm ⅓ cup of the heavy whipping cream over low heat until it just begins to steam. Remove from the heat and stir in the red raspberry leaf. Cover and let steep for 20 minutes.
- Strain the cream through a fine-mesh sieve, pressing gently on the leaves to extract all the flavor. Add enough of the remaining cream to measure ⅓ cup. Refrigerate until completely chilled.
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking soda, baking powder, and salt.
- Grate the frozen butter directly into the flour mixture and gently toss until the butter is evenly coated.
- In a separate bowl, whisk together the chilled infused cream, Greek yogurt, egg, and vanilla.
- Pour the wet ingredients into the dry ingredients and stir just until large clumps begin to form. Gently fold and press the dough together with a spatula, then knead it just a few times with your hands until it holds together. Avoid overmixing.
- Turn the dough onto a lightly floured surface and gently pat it into an 8-inch circle about 1 inch thick. Cut into 8 wedges and transfer to the prepared baking sheet.
- Brush the tops with heavy cream and sprinkle with coarse sugar, if desired.
- Bake for 16 to 18 minutes, or until the tops are lightly golden. Cool on the baking sheet for 10 minutes before serving.
