We get asked for chai every single day. This is the one we walk people to first, because it is the mellow classic and the rest of our chai shelf goes up from there, Pink Chai included. Before anyone leaves we give the same advice: make it with whole milk and sweeten it with Indian Jaggery instead of sugar. That is how we make it at home, and it makes all the difference.

  • How to brew it hot

    Use 1 teaspoon of loose leaf tea per 8 ounces of water at 212°F.
    Steep for 3 to 5 minutes.
    The CTC leaf gives you a strong cup fast at full boil.

  • How to make iced tea

    Use 2 teaspoons of loose leaf tea per 8 ounces of water at 212°F.
    Steep for 3 to 5 minutes, then pour over a full glass of ice.
    Double the leaf so the ice does not thin the cup.

  • How to cold brew

    Use 1.5 teaspoons of loose leaf tea per 8 ounces of filtered water.
    Steep in your fridge for 8 to 12 hours.
    Strain out the leaves and enjoy!

Beyond the Cup: Make Something Tasty with This Masala Chai Organic Black Tea

Masala Chai English Cakes

Serves 12

Masala Chai Organic infuses into warm milk before folding into a spiced, raisin studded dough, more like a tea scone than a cake despite the name.

Ingredients

  • 4 tsp Masala Chai Organic tea
  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 cup raisins
  • 1/2 cup butter
  • 1/2 cup milk
  • 2 tsp baking powder
  • 1 egg
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. Warm the milk on the stovetop, add the Masala Chai Organic tea, and set aside to infuse for 5 minutes.
  3. Cut the butter into small cubes. In a food processor or mixing bowl, crumb together the flour, baking powder, salt, and butter. Add the brown sugar, egg, vanilla, and chai infused milk, and mix well to combine.
  4. Mix in the raisins and combine to a smooth but sticky dough.
  5. Roughly dollop 12 portions of the dough onto your baking sheet using a tablespoon.
  6. Sprinkle a little granulated sugar on top (optional).
  7. Place in the oven for around 20 minutes, until golden brown on top. Best enjoyed with a hot cup of chai.
