Every second Saturday morning the phone rings and we already know who it is. Before one of our regular customers finishes saying hello, he is asking us to have two big bags of the Japanese rice tea ready. Those two bags come to a full pound. He lived in Japan for more than twenty years and tells us this one is every bit as good as the genmaicha he drank there, and better on some days. That is not a compliment we will ever take for granted.

  • How to brew it hot

    Use 1 teaspoon of loose leaf tea per 8 ounces of filtered water. Heat your water to 175-180°F and steep for 2-3 minutes. Green tea turns bitter when the water runs too hot.

  • How to make iced tea

    Use 2 teaspoons of loose leaf tea per 8 ounces of filtered water. Heat your water to 175-180°F and steep for 2-3 minutes, then pour over a full glass of ice. The extra leaf keeps the cup from thinning out as the ice melts.

  • How to cold brew

    Use 1.5 teaspoons of loose leaf tea per 8 ounces of filtered water. Steep in your fridge for 3 to 6 hours. Strain out the leaves and enjoy! Cold water pulls a smoother cup with no bitterness.

Toasted Genmaicha "Umami" Broth

Serves 4

A savory, restorative broth where toasted Genmaicha green tea is steeped into ginger-infused vegetable stock for a nutty, umami-rich sip or soup base.

Ingredients

  • 2 tablespoons Organic Japanese Genmaicha Green Tea
  • 4 cups high-quality vegetable or kombu (kelp) broth
  • 1 small knob of fresh ginger, sliced
  • 1 teaspoon soy sauce or tamari
  • Optional: A squeeze of fresh lime or a drizzle of toasted sesame oil to finish

Instructions

  1. In a medium saucepan, bring the vegetable broth and ginger to a gentle simmer. Do not let it come to a hard boil.
  2. Remove the saucepan from the heat and stir in the Genmaicha tea. Cover and let it steep for exactly 4 minutes. The toasted rice kernels will soften and release their nutty, roasted aroma into the broth.
  3. Carefully strain the broth through a fine-mesh sieve into a clean pot, discarding the tea leaves and rice kernels.
  4. Stir in the soy sauce or tamari. Taste your broth—you should notice the crisp, clean notes of the green tea layered with a deeply savory, toasted finish from the rice.
  5. Use this broth as a base for a quick noodle soup with bok choy and mushrooms, or serve it simply as a warm, restorative cup on its own.
