From Our Laguna Beach Tea Shop

We started carrying this blend because customers came to us looking for a truly herbal Earl Grey. Most of the inquirers were classic Earl Grey drinkers who had grown sensitive to caffeine over time. They wanted the bergamot, but not the caffeine. This is the blend that satisfies them.

  • How to brew it hot

Use 1 teaspoon of loose leaf tea per 8 ounces of water heated to 212°F. Steep for 5 to 10 minutes. Boiling water and a long steep get the most out of the leaf.

  • How to make iced tea

Use 2 teaspoons of loose leaf tea per 8 ounces of water heated to 212°F. Steep for 5 to 10 minutes, then pour over a full glass of ice. The extra leaf keeps it from thinning out as the ice melts.

  • How to cold brew

Use 1.5 teaspoons of loose leaf tea per 8 ounces of filtered water.
Steep in your fridge for 10 to 14 hours.
Strain out the leaves and enjoy!

Earl Grey Rooibos Latte

Serves 2

A robust Earl Grey Rooibos Organic concentrate meets warm milk and honey or maple syrup for a cozy, cafe-style latte you can froth at home.

Ingredients

  • 1 tablespoon Earl Grey Rooibos Organic tea
  • 1 cup boiling water (for a rich, concentrated steep)
  • 1 cup whole milk, oat milk, or cashew milk (oat and cashew bring a lovely natural sweetness)
  • 1 tablespoon maple syrup or honey, or to taste
  • 1/2 teaspoon pure vanilla extract
  • Garnish: a light dusting of ground cinnamon or organic culinary lavender

Instructions

  1. Pour 1 cup of boiling water over 1 tablespoon of Earl Grey Rooibos Organic tea leaves. Let it steep for 5 to 6 minutes. Rooibos cannot over-steep into bitterness, so letting it go a bit longer builds a robust, bergamot-forward concentrate that won't get lost in the milk. Strain out the leaves.
  2. In a small saucepan over medium-low heat, warm your milk of choice until it is hot and steaming, but not boiling.
  3. Whisk the strong rooibos concentrate, maple syrup or honey, and vanilla extract directly into the warm milk.
  4. If you have a milk frother or handheld frother, give it a quick spin to create a velvety, cafe-style foam on top.
  5. Pour into two mugs, dust with a tiny pinch of cinnamon or lavender, and sip slowly.
