From Our Laguna Beach Tea Shop

Fruit tea lovers come in braced for the artificial candy taste they find in lesser quality teas. We hand them the tin and the reaction is immediate, a full stop and a wide-eyed whoa. What wins them is that the elderberries and currants are the real thing, with hibiscus for the bite and a proper black tea base holding it together.

If Elderberry Black is your kind of tea, Mango Tango is the next fruity black tea to try, brighter and tropical where this one is deep and tart. And if you want that same bold fruit flavor somewhere lighter and caffeine free, Fruity Apricot Green is the one to explore next.

  • How to brew it hot

Use 1 teaspoon of loose leaf tea per 8 ounces of water at 212°F.
Steep for 3 to 5 minutes.
Full boiling water gets the most out of the berries.

  • How to make iced tea

Use 2 teaspoons of loose leaf tea per 8 ounces of water at 212°F.
Steep for 3 to 5 minutes, then pour over a full glass of ice.
Double the leaf so the ice does not thin the cup.

  • How to cold brew

Use 1.5 teaspoons of loose leaf tea per 8 ounces of filtered water.
Steep in your fridge for 8 to 12 hours.
Strain out the leaves and enjoy!

Elderberry Tea Cake

Serves 8

Elderberry Black Organic tea steeps into warm milk before it's folded into the batter, keeping the cake moist with a subtle fruity depth.

Ingredients

  • 1 cup milk
  • 3 tbsp Elderberry Black Organic tea
  • 1/4 cup butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup avocado oil
  • 1 tsp pure vanilla extract
  • 1 3/4 cups cake flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp Himalayan salt

Instructions

  1. Preheat oven to 350°F. Grease a 9-inch round cake pan.
  2. Warm the milk until near boiling. Add the elderberry tea directly into the milk and allow to cool.
  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
  4. Beat in the oil and vanilla extract. Gradually add the cake flour, baking powder, baking soda, and salt. Stir in the tea brewed milk, mixing until the batter is uniform and smooth.
  5. Transfer the batter to the prepared pan and bake for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow to cool before serving.
