Amaretti are the almond cookies at Italian weddings. This is the tea version. Almond is the star, the cookie note follows, and the black base underneath has the body to carry both. It had to go on our Dessert Collection shelf.

People come in for their wellness blends, catch this one on the Dessert Tea shelf on way there, and leave with a bag of it alongside everything else. It is not that they arrived wanting dessert. It catches their imagination and then a quick smell and it's sold.

  • How to brew it hot

    1 teaspoon per 8 oz, 212°F, steep 3 to 5 minutes. Black tea needs the full boil.

  • How to make iced tea

    2 teaspoons per 8 oz, same water and steep time, then pour over a full glass of ice. Double strength so the ice doesn't dilute it.

  • How to cold brew

    Use 1.5 teaspoons of loose leaf tea per 8 ounces of filtered water.
    Steep in your fridge for 8 to 12 hours.
    Strain out the leaves and enjoy!

Beyond the Cup: Make Something Tasty with This Almond Amaretti

Peach Tea Pops

Serves 6

Almond Amaretti Dessert tea sets into a frozen layer with fresh peach chunks, then gets topped with a creamy Greek yogurt and honey base.

Ingredients

  • 1 1/2 cups boiling water
  • 1 1/2 tbsp Almond Amaretti Dessert tea
  • 1 fresh ripe peach, pitted and roughly cut into 1-inch chunks
  • 1/2 cup plain Greek yogurt
  • 1/4 cup heavy cream
  • 3 tbsp honey

Instructions

  1. In a large measuring cup, combine the boiling water and Almond Amaretti Dessert tea. Steep for 5 to 7 minutes.
  2. Carefully pour about 2 oz of the tea into each of 6 popsicle molds. Drop a few peach chunks into each mold and transfer to the freezer to set for at least 3 hours.
  3. Once the tea layer has frozen, make the cream base. In a medium bowl, whisk together the Greek yogurt, heavy cream, honey, and the remaining peach chunks.
  4. Divide the cream base evenly between the 6 popsicle molds and transfer to the freezer to set for at least 5 hours, preferably overnight.
  5. To serve, unmold each popsicle by dipping quickly in a tall glass of boiling water. Serve immediately.
