From Our Laguna Beach Tea Shop

On a trip to Japan, we learned that sencha can be used to make a savory broth instead of the usual bonito or kombu stock. We started making a stronger batch at home to sip alongside soup, and it’s become one of our favorite ways to enjoy sencha beyond a regular cup.

We still think about the tasting class where we first discovered Sencha, Dragonwell, and Gyokuro together. They’re all green teas, but tasting them side by side showed us just how different green tea can be.

  • How to brew it hot

    Use 1 teaspoon of loose leaf tea per 8 ounces of water at 175 to 180 degrees. Steep 2 to 3 minutes. Water this gentle protects the natural sweetness in these young leaves instead of pulling bitterness out of them.

  • How to make iced tea

    Use 2 teaspoons of loose leaf tea per 8 ounces of water at 175 to 180 degrees. Steep 2 to 3 minutes and pour over a full glass of ice. The extra leaf covers what the ice waters down.

  • How to cold brew

    Use 1.5 teaspoons of loose leaf tea per 8 ounces of filtered water.
    Steep in your fridge for 3 to 6 hours.
    Strain out the leaves and enjoy!

Beyond the Cup: Make Something Tasty with This Sencha Organic Tea

Sencha Infused Steamed Jasmine Rice

Serves 4

Jasmine rice simmered and steamed in brewed Sencha instead of water, taking on a delicate vegetal note and a subtle golden-green hue.

Ingredients

  • 1 cup organic jasmine or basmati rice
  • 1.5 cups prepared Sencha Organic Tea (brewed with 175°F water for 2 minutes and strained)
  • 1/2 teaspoon sea salt
  • Optional: A small piece of ginger (bruised) or a splash of toasted sesame oil to serve

Instructions

  1. Brew your Sencha tea according to your shop's standard. The liquor should be a beautiful, vibrant green. Strain it to ensure no leaves remain.
  2. Rinse your rice thoroughly until the water runs clear. In a medium saucepan, combine the rinsed rice, the 1.5 cups of brewed Sencha, and the sea salt.
  3. Bring the mixture to a gentle boil over medium heat. Once boiling, cover the pot with a tight-fitting lid, reduce the heat to the lowest setting, and simmer for 15–18 minutes (or according to your rice package instructions).
  4. Remove the pot from the heat and let it sit, covered, for another 5–10 minutes. This allows the delicate vegetal notes of the Sencha to fully infuse into the rice grains.
  5. Gently fluff the rice with a fork. You will notice a subtle, savory aroma and a slightly golden-green hue. Serve alongside steamed fish, roasted vegetables, or a light stir-fry.
