This is the tea we use to make one of our favorite smoky barbecue rubs. We love telling customers that, mostly for the pause that follows, because nobody expects loose leaf tea to end up on grilled food. They leave with tea and a recipe they did not come in for. That is why we keep it stocked.

  • How to brew it hot

    Use 1 teaspoon of loose leaf tea per 8 ounces of water at 212°F.
    Steep for 3 to 5 minutes.
    Full boiling water gets the smoke out of the leaf.

  • How to make iced tea

    Use 2 teaspoons of loose leaf tea per 8 ounces of water at 212°F.
    Steep for 3 to 5 minutes, then pour over a full glass of ice.
    Double the leaf so the ice does not thin the cup.

  • How to cold brew

    Use 1.5 teaspoons of loose leaf tea per 8 ounces of filtered water.
    Steep in your fridge for 8 to 12 hours.
    Strain out the leaves and enjoy!

The Russian Caravan Smoked Finishing Salt

Makes about 1/2 cup

This creates a savory, campfire-inspired seasoning that is incredible on roasted vegetables, avocado toast, or even sprinkled over grilled stone fruit.

Ingredients

  • 1 tablespoon Russian Caravan Tea (the smoky Lapsang Souchong is the hero here)
  • 3 tablespoons high-quality flaky sea salt (like Maldon)
  • 1 teaspoon black peppercorns
  • 1/2 teaspoon dried chili flakes (optional, for a little heat)

Instructions

  1. In a clean spice grinder or mortar and pestle, combine the Russian Caravan leaves, peppercorns, and chili flakes. Give them a quick pulse or grind, aiming for a coarse texture, not a fine powder.
  2. Mix this blend into the flaky sea salt.
  3. Put it in a small glass jar or a compostable tea pouch.
  4. Tell your customers to use this as a "finishing salt," a final pinch on roasted sweet potatoes, charred corn, or a Caprese salad to add a surprising, smoky, complex depth.
