This is a fine Japanese green tea grown in the dark. Growers shade the leaves before picking them, and the timing is exact. That shade is why the steam smells sweet and the cup tastes of umami, deep and thick enough that you feel it as you drink. Nothing is added and nothing is blended with it. One ingredient, one very good cup.

Gyokuro did not make it onto our shelf right away. Then the phone calls started, with customers asking whether we had it after hearing about it from friends or reading about it in articles and online discussions. Before long we realized it belonged here, and we are glad we listened. When someone asks what makes gyokuro different, we bring out Sencha and Dragonwell too. All are good choices but so different.

  • How to brew it hot

    Use 1 teaspoon of loose leaf tea per 8 ounces of filtered water. Heat your water to 175-180°F and steep for 2-3 minutes. Green tea turns bitter when the water runs too hot.

  • How to make iced tea

    Use 2 teaspoons of loose leaf tea per 8 ounces of filtered water. Heat your water to 175-180°F and steep for 2-3 minutes, then pour over a full glass of ice. The extra leaf keeps the cup from thinning out as the ice melts.

  • How to cold brew

    Use 1.5 teaspoons of loose leaf tea per 8 ounces of filtered water. Steep in your fridge for 3 to 6 hours. Strain out the leaves and enjoy! Cold water pulls a smoother cup with no bitterness.

Ultimate Green Tea Smoothie

Serves 2

Homemade Gyokuro matcha, ground fresh, blended with mango, banana, Greek yogurt, and chia for a creamy, protein-packed smoothie.

Ingredients

  • 1 heaping tbsp Gyokuro Organic Tea, ground to a powder (homemade gyokuro matcha)
  • 1.5 cups fresh or frozen mango
  • 1 whole ripe banana
  • 1/4 cup Greek yogurt
  • 1 tbsp chia seeds, for protein
  • 1-2 tbsp local raw honey
  • 1 tsp vanilla extract
  • 1/2 cup ice cubes (6-8)

Instructions

  1. Grind the tea leaves in a stone mortar and pestle until a fine powder is formed. We like to do ours in a coffee grinder. This is your homemade gyokuro matcha.
  2. Add the gyokuro matcha, mango, banana, Greek yogurt, chia seeds, honey, vanilla extract, and ice cubes to a blender.
  3. Blend until smooth and creamy.
  4. Taste. Add additional fruit or sweetener as desired. Serve immediately. Enjoy!
