Time is also an ingredient here. The tea leaves are aged in bergamot, and that makes the difference. The whole method: fair trade black tea, bergamot oil and patience. It brews strong which is why it's a favorite for people who don't want a weak Earl Grey.

From Our Laguna Beach Tea Shop

Regulars buy it by the pound because nothing else will do. Most come back after their first pouch of it and tell us they love it because its got some real strength.

If this is your Earl Grey, Moonlit is worth trying for something bolder and more layered, with vanilla and creme alongside the bergamot. And if you want no bergamot at all, English Breakfast is the straightforward morning cup. For the classic tea lover, this is the one.

  • How to brew it hot

1 teaspoon per 8 oz, 212°F, steep 3 to 5 minutes. Black tea needs the full boil.

  • How to make iced tea

2 teaspoons per 8 oz, same water and steep time, then pour over a full glass of ice. Double strength so the ice doesn't dilute it.

  • How to cold brew

Use 1.5 teaspoons of loose leaf tea per 8 ounces of filtered water.
Steep in your fridge for 8 to 12 hours.
Strain out the leaves and enjoy!

Earl Grey Organic tea steeps into a strong brew that folds right into the dough, with cinnamon and cardamom dusted on top after baking.

Ingredients

  • 1 tbsp Earl Grey Organic tea
  • 1/3 cup boiling water
  • 1/4 cup butter, softened
  • 1/2 cup sugar
  • 1 large egg, room temperature
  • 2 cups all-purpose flour
  • 1 tsp ground Indonesian cinnamon, divided
  • 1/4 tsp cardamom seed powder
  • 1/2 tsp salt
  • 2 tbsp confectioners' sugar

Instructions

  1. Place the Earl Grey tea in a 1-cup glass measuring cup. Add boiling water and steep for 3 to 5 minutes. Strain and cool completely.
  2. Preheat oven to 400°F. In a small bowl, cream the butter and sugar until light and fluffy, 5 to 7 minutes. Beat in the egg and cooled tea.
  3. In another bowl, whisk together the flour, 1/2 tsp cinnamon, cardamom, and salt. Gradually beat into the creamed mixture.
  4. Shape level tablespoons of dough into balls and place 2 inches apart on ungreased baking sheets. Flatten slightly with the bottom of a glass.
  5. Bake for 6 to 8 minutes, or until light brown. Remove to wire racks to cool completely. Mix the confectioners' sugar and remaining cinnamon, then dust the cookies with the cinnamon mixture.
