Simply the Best Chicken & Rice Soup

Serves 4 to 5

A creamy chicken and rice soup built on Herbs de Provence Spice Blend and finished with evaporated milk.

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, minced
  • 3 large carrots, peeled and diced
  • 1 stalk celery, diced
  • 2 tsp garlic, minced
  • 1 1/2 tsp Herbs de Provence Spice Blend
  • 1 tsp Himalayan salt
  • 1/8 tsp black Tellicherry pepper
  • 5 cups low sodium chicken broth
  • 2 chicken thighs, uncooked
  • 1 cup brown rice
  • 1 cup evaporated milk

Instructions

  1. In a large soup pot, heat oil over medium-high heat. Add onion, carrots, and celery, and cook, stirring, for 4 to 5 minutes, until the onion begins to turn golden.
  2. Add garlic and Herbs de Provence Spice Blend, and cook one minute.
  3. Add salt, pepper, broth, and chicken, then add the rice. Stir and bring to a boil over medium-high heat.
  4. Reduce heat to medium-low, cover, and simmer for 30 minutes, stirring every 10 minutes, until the vegetables and rice are tender.
  5. Remove the chicken from the pot and shred it, then return it to the pot with the evaporated milk.
