Tales from Our Laguna Beach Shop About This Tea

We carry a lot of ginger teas, and this is the one most people choose when they want the ginger without the caffeine. It's also the most ginger centric blend on our shelf. Back when we were at the Laguna Beach Farmers Market, we poured this one out of thermoses as samples, hot on chilly mornings and iced on warm afternoons. Those customers now stop by the shop to buy their favorite ginger tea.

  • How to brew it hot

    1 teaspoon per 8 oz, 212°F, steep 5 to 10 minutes. Rooibos needs the full boil and a long steep.

  • How to make iced tea

    2 teaspoons per 8 oz, same water and steep time, then pour over a full glass of ice. Double strength so the ice doesn't dilute it.

  • How to cold brew

    Use 1.5 teaspoons of loose leaf tea per 8 ounces of filtered water.
    Steep in your fridge for 10 to 14 hours.
    Strain out the leaves and enjoy!

Lemon Ginger Rooibos Baked Oatmeal

Serves 6

A cozy baked oatmeal infused with Lemon Ginger Rooibos tea, brightened with lemon zest and studded with fresh blueberries.

Ingredients

  • 3 tbsp Tea & Turmeric Lemon Ginger Rooibos Organic
  • 2 cups freshly boiled water
  • 2 cups old-fashioned rolled oats
  • 1 tsp baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp sea salt
  • 2 eggs
  • ¼ cup honey
  • 2 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease an 8-inch square baking dish.
  2. Steep the Lemon Ginger Rooibos tea in the freshly boiled water for 10 minutes. Strain and allow the tea to cool slightly.
  3. In a large bowl, combine the oats, baking powder, cinnamon, and salt.
  4. In a separate bowl, whisk together 1½ cups of the brewed tea, eggs, honey, melted butter, vanilla, and lemon zest.
  5. Pour the wet ingredients into the oats and stir until evenly combined. Gently fold in the blueberries.
  6. Transfer the mixture to the prepared baking dish and bake for 35 to 40 minutes, until the center is set and the top is lightly golden.
  7. Allow the baked oatmeal to rest for 10 minutes before serving. Drizzle with a little honey, if desired.
