One of our regulars, Helena, started cold brewing this in coconut water after we mentioned the idea to her. Not long after, she called us slightly panicked because her ten year old had found the jug in the fridge, loved it, and wanted more. Once we explained how much less caffeine there is in white tea than in black, everyone could laugh about it.   • How to brew it hot

    Use 1 teaspoon of loose leaf tea per 8 ounces of water at 175 to 180 degrees. Steep 2 to 3 minutes. Lower water temperature keeps white tea from turning bitter.

  • How to make iced tea

    Use 2 teaspoons of loose leaf tea per 8 ounces of water at 175 to 180 degrees. Steep 2 to 3 minutes and pour over a full glass of ice. The extra leaf covers what the ice waters down.

  • How to cold brew

    Use 1.5 teaspoons of loose leaf tea per 8 ounces of filtered water.
    Steep in your fridge for 3 to 6 hours.
    Strain out the leaves and enjoy!

Beyond the Cup: Make Something Tasty with This Organic Ginger Pear White Tea

White Ginger Pear Tea Jelly

Serves 6

A delicate set tea jelly made with White Ginger Pear tea, honey, and lemon, layered over fresh pear slices — a light, elegant dessert.

Ingredients

  • 3 tbsp Tea & Turmeric Organic White Ginger Pear Tea
  • 2 cups freshly boiled water
  • 2 tbsp honey
  • 1 tbsp fresh lemon juice
  • 2½ tsp unflavored gelatin
  • 1 ripe pear, thinly sliced
  • Fresh mint leaves, for garnish (optional)

Instructions

  1. Steep the White Ginger Pear Tea in the freshly boiled water for 5 minutes. Strain the tea into a saucepan.
  2. Whisk in the honey and lemon juice. Sprinkle the gelatin over the warm tea and whisk until completely dissolved. Do not boil.
  3. Divide the thin pear slices among six small glasses or ramekins.
  4. Pour the tea mixture over the pears and refrigerate for at least 4 hours, or until set.
  5. Garnish with fresh mint just before serving, if desired.
