This is the gentle end of chai. The rooibos gives it a warm, almost baked base, and the cinnamon and cardamom stay soft on top of it. People make it in the evening, when what they want from a chai is comfort, and there is no caffeine in it to get in the way. The spice never gets ahead of the rooibos, and that restraint is the whole character of the cup.

Sold in 1 oz quantities. Each oz makes 6 to 10 cups of tea.

Tales from Our Laguna Beach Shop About This Tea

When someone asks us for a chai without the caffeine, we show them two, this one and a decaffeinated black tea chai. The ones who want the gentler cup almost always take this one. We also have a longtime customer who drives in from Riverside about once a month to stock up, and on a recent visit she got emotional telling us she was moving out of state and would miss coming in. She's happy that we'll ship it to her anywhere in the USA.

  • How to brew it hot

    1 teaspoon per 8 oz, 212°F, steep 5 to 10 minutes. Rooibos needs the full boil and a long steep.

  • How to make iced tea

    2 teaspoons per 8 oz, same water and steep time, then pour over a full glass of ice. Double strength so the ice doesn't dilute it.

  • How to cold brew

    Use 1.5 teaspoons of loose leaf tea per 8 ounces of filtered water.
    Steep in your fridge for 10 to 14 hours.
    Strain out the leaves and enjoy!

Chai Rooibos French Toast

Serves 4

Thick-cut brioche soaked in a Chai Rooibos-spiked custard, pan-fried golden, and topped with pears, pecans, and warm maple syrup.

Ingredients

  • 1 tbsp Tea & Turmeric Chai Rooibos Tea
  • 1/2 cup boiling water
  • 4 large eggs
  • 1/2 cup whole milk
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • 8 slices thick-cut brioche or sourdough bread
  • 2 tbsp unsalted butter
  • For serving: sliced pears or apples
  • For serving: toasted pecans
  • For serving: warm maple syrup

Instructions

  1. Steep the Chai Rooibos Tea in 1/2 cup boiling water for 5 to 7 minutes. Strain and let cool slightly.
  2. Whisk together the brewed tea, eggs, milk, maple syrup, vanilla, and sea salt until smooth.
  3. Dip each slice of bread into the custard for about 10 seconds per side.
  4. Melt the butter in a large skillet over medium heat. Cook the French toast for 3 to 4 minutes per side, until golden brown and cooked through.
  5. Serve warm with sliced pears or apples, toasted pecans, and a drizzle of warm maple syrup.
