When people who have tried all kinds of different chais come into the store and ask for something different, we show them three teas that answer that question. This is one, along with our Pink Masala Chai and our Kolkata Teen Paan Chai, which is an acquired taste and worth acquiring. Madurai Floral Chai is the one we point to when somebody wants the flowers as much as the spice.

  • How to brew it hot

    Use 1 teaspoon per 8 oz. Steep at 212°F for 3-5 minutes. A full boil gets the most out of the spice.

  • How to make iced tea

    Use 2 teaspoons per 8 oz. Steep at 212°F for 3-5 minutes, then pour over a full glass of ice. Double strength keeps the ice from watering it down.

  • How to cold brew

    Use 1.5 teaspoons of loose leaf tea per 8 ounces of filtered water.
    Steep in your fridge for 8 to 12 hours.
    Strain out the leaves and enjoy!
    A long cold steep gives you a smoother cup.

Beyond the Cup: Make Something Tasty with This Madurai Floral Chai Tea

Madurai Floral Chai Panna Cotta

Serves 4

A silky, chilled panna cotta infused with aromatic Madurai Floral Chai for an elegant, fragrant finish.

Ingredients

  • 2 cups heavy cream (or full-fat coconut milk for a dairy-free version)
  • 3 tablespoons Madurai Floral Chai
  • 1/3 cup sugar
  • 1 packet (about 2 1/4 teaspoons) unflavored powdered gelatin
  • 3 tablespoons cold water
  • Optional: a drop of vanilla extract

Instructions

  1. Infuse the Cream: In a saucepan, heat the cream and sugar over medium heat until it just begins to simmer. Remove from heat, stir in the Madurai Floral Chai, and cover the pot. Let it steep for 10 to 15 minutes.
  2. Strain: Pour the mixture through a fine-mesh sieve into a clean bowl, pressing on the leaves to extract all the flavor. You now have a chai-infused, aromatic cream.
  3. Bloom the Gelatin: In a small bowl, stir the gelatin into the cold water and let it sit for 5 minutes until it looks like applesauce.
  4. Combine: Whisk the bloomed gelatin into the warm tea-infused cream until completely dissolved.
  5. Set: Divide the mixture into 4 ramekins or small glass jars. Refrigerate for at least 4 hours, or until firmly set.
  6. Serve: Serve chilled. You can top it with a few fresh berries or a light dusting of cinnamon.
