Kashmiri households have made green tea this way for generations, and we bring it from India exactly as it is made there, because a recipe that old has already been perfected. You'll smell the saffron before you taste anything, then the cardamom and the warm spices, and then the almond, which gives the cup a body you can sit with. Our only contribution is the shelf.

Two very different people reach for this tea. The first is the customer who is curious about how the rest of the world drinks tea, and that customer nearly always picks this one up, partly for the history and partly because it is simply delicious. The second is the saffron lover. For them we will usually pull down Persian Saffron Rose Black Tea and Saffron Soul Herbal Tea as well, since each one does something completely different with saffron.

  • How to brew it hot

    Use 1 teaspoon of loose leaf tea per 8 ounces of water at 175 to 180 degrees. Steep 2 to 3 minutes. Lower water temperature keeps green tea from turning bitter.

  • How to make iced tea

    Use 2 teaspoons of loose leaf tea per 8 ounces of water at 175 to 180 degrees. Steep 2 to 3 minutes and pour over a full glass of ice. The extra leaf covers what the ice waters down.

  • How to cold brew

    Use 1.5 teaspoons of loose leaf tea per 8 ounces of filtered water.
    Steep in your fridge for 3 to 6 hours.
    Strain out the leaves and enjoy!

Beyond the Cup: Make Something Tasty with This Kashmiri Almond Saffron Green Tea

Kashmiri Rose & Almond Tea Granita

Serves 4

A light, fluffy frozen treat made from Kashmiri Almond Saffron Green Tea, sweetened with honey and rose water, and finished with toasted almonds and rose petals.

Ingredients

  • 1.5 teaspoons Kashmiri Almond Saffron Green Tea
  • 12 ounces filtered water (heated to 175°F/80°C)
  • 2 tablespoons honey or agave nectar
  • 1/4 teaspoon rose water (optional)
  • Garnish: Toasted almond slivers and a pinch of dried rose petals

Instructions

  1. Steep the tea in the 175°F water for 3 minutes.
  2. Strain the tea into your wide, shallow dish. Stir in the honey (and rose water) while it's still warm.
  3. Cool to room temperature, then freeze. Scrape with a fork every 30–45 minutes until you reach that light, fluffy, granita texture.
  4. Scoop into bowls and garnish with the almonds and rose petals.
