Chai has been part of our daily lives since childhood, and it was always made the traditional way with black tea. Green tea chai was new to us, and it was new to just about everyone who walked into the shop. That curiosity alone was enough to earn it a place on our shelf, and one cup was all it took to convince us. The question we hear most often is whether there is a version for the evening. That is when we bring out Organic Chai Rooibos, which has all the same comforting spices without the caffeine.

  • How to brew it hot

    Use 1 teaspoon of loose leaf tea per 8 ounces of filtered water. Heat your water to 175-180°F and steep for 2-3 minutes. Green tea turns bitter when the water runs too hot.

  • How to make iced tea

    Use 2 teaspoons of loose leaf tea per 8 ounces of filtered water. Heat your water to 175-180°F and steep for 2-3 minutes, then pour over a full glass of ice. The extra leaf keeps the cup from thinning out as the ice melts.

  • How to cold brew

    Use 1.5 teaspoons of loose leaf tea per 8 ounces of filtered water. Steep in your fridge for 3 to 6 hours. Strain out the leaves and enjoy! Cold water pulls a smoother cup with no bitterness.

Spiced Apple Treat

Serves 4 (estimated)

Baking apples cored and filled with a brown sugar, walnut, and raisin mixture, then baked in brewed Green Cha Chai tea until tender.

Ingredients

  • 1 cup water
  • 2 tbsp Green Cha Chai
  • 4 large baking apples
  • 1/4 cup dark brown sugar, firmly packed
  • 4 tsp butter
  • 1/2 tsp Indonesian cinnamon
  • 1/4 cup walnuts, chopped
  • 2 tbsp raisins

Instructions

  1. In a saucepan, bring water to a boil. Remove from heat. Add Green Cha Chai and brew 1 to 2 minutes. Strain tea.
  2. Using a small paring knife, peel a third of the top skin of the apples and core at about 1 inch wide, leaving the base intact.
  3. Arrange apples in a single layer with peeled end up in an 8x8 square baking dish.
  4. In a small bowl, combine brown sugar, butter, and cinnamon. Add walnuts and raisins.
  5. Evenly spoon mixture into the center of the apples and sprinkle evenly on top.
  6. Pour brewed tea over and around apples. Bake, uncovered and basting occasionally, in a preheated 350°F oven for about 50 to 60 minutes or until tender. Enjoy!
