Put Sumac To Work
Fattoush, Mediterranean Salad
Serves 3 to 4
If you're trying sumac for the first time, fattoush is one of the easiest ways to understand what it brings to a dish.
Ingredients
- 1 cup dry quinoa
- 2 cups water
- 1 tsp sea salt
- 3 Persian cucumbers, chopped small
- 4 Roma tomatoes, chopped small
- 1/2 small red onion, finely chopped
- 1 to 2 tbsp fresh lemon juice
- 1/2 tsp ground black pepper
- 1 tbsp za'atar spice blend
- 2 tsp ground sumac
- 2 tbsp extra virgin olive oil
- 1/2 cup flat-leaf parsley, chopped
Instructions
- Bring the water to a boil. Stir in the quinoa and salt, reduce the heat, cover, and simmer until the water is absorbed. Cool for 15 minutes.
- Combine the cucumber, tomatoes, onion, parsley, lemon juice, black pepper, za'atar, sumac, and olive oil.
- Toss the vegetables with the cooled quinoa and serve as a main dish or alongside grilled meat, fish, or beans.
- Optional: Sprinkle feta cheese over the top before serving.
