What We tell customers about Sichuan Peppercorns

Sichuan peppercorns don't work like other peppercorns. They aren't even true peppercorns, they're the dried husks of a small citrus relative, which is where that bright lemony aroma comes from.

We use these to make our own chili crisp a home!

  • What to use it on

    Lightly toast the husks in a dry pan until fragrant, then grind them and discard the hard black seeds before using.

    Infuse the toasted peppercorns in hot oil for a few minutes, then strain for a fragrant finishing oil over noodles or dumplings.

    Add a pinch to a stir-fry near the end of cooking so the tingle stays vivid.

    Mix toasted, ground Sichuan peppercorn with salt for an easy finishing salt, or sprinkle a pinch over cucumber salad or roasted peanuts for a bright citrusy finish.

    Toast the peppercorns just until fragrant. Over-toasting can make them bitter. Infuse them in hot oil, then strain them out for a fragrant finishing oil that's delicious over noodles, dumplings, stir-fries, or roasted vegetables

Sichuan Peppercorn Salt

Makes about 1/3 cup

If you're new to Sichuan peppercorns, this seasoned salt is the perfect place to start.

Ingredients

  • 2 tbsp Sichuan peppercorns
  • 4 tbsp kosher salt or sea salt

Instructions

  1. Mix the salt and peppercorns together.
  2. Heat in a heavy pan over medium-low heat, shaking continuously until fragrant, about 8 to 10 minutes.
  3. Cool completely, then grind using a blender, food processor, mortar and pestle, or rolling pin.
  4. Store in a sealed jar at room temperature for several months.
