Put Whole Nutmeg To Work
Boozy Holiday Cheer Eggnog
Makes about 8 cups
If you've never cooked with freshly grated nutmeg before, homemade eggnog is the perfect place to taste the difference.
Ingredients
- 6 eggs, room temperature, separated
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1/2 tsp freshly grated whole nutmeg
- 3 cups light whipping cream
- 2 cups whole or 2% milk
- 2 cups rum or bourbon
- Freshly grated whole nutmeg, for serving
Instructions
- Beat the egg yolks until pale yellow, then whisk in the sugar and vanilla.
- Heat the cream, milk, and nutmeg until just simmering.
- Slowly temper the hot mixture into the egg mixture.
- Return to the saucepan and cook until it reaches 160°F.
- Chill completely.
- Beat the egg whites to soft peaks and gently fold them into the chilled eggnog.
- Serve with freshly grated nutmeg over each glass.
