Nettle Pesto with Parmesan
Makes about 1 cup
A vibrant, nutrient-rich twist on classic pesto, blending rehydrated nettle leaf with basil, Parmesan, and toasted nuts.
Ingredients
- 2 tbsp Tea & Turmeric Nettle Leaf
- ¼ cup hot water
- 2 cups fresh basil leaves, packed
- ⅓ cup grated Parmesan cheese
- ⅓ cup toasted pine nuts or walnuts
- 2 garlic cloves
- ½ cup extra virgin olive oil
- 2 tbsp fresh lemon juice
- ½ tsp sea salt
- Freshly ground black pepper, to taste
Instructions
- Place the nettle leaf in a small bowl and pour the hot water over it. Let steep for 10 minutes, then drain well and gently squeeze out any excess liquid.
- Add the rehydrated nettle, basil, Parmesan, pine nuts, garlic, lemon juice, salt, and pepper to a food processor.
- Pulse several times until finely chopped. With the processor running, slowly drizzle in the olive oil until the pesto is smooth but still has a little texture.
- Taste and adjust the seasoning with additional salt, pepper, or lemon juice as needed.
- Transfer to a jar or serving bowl. If storing, pour a thin layer of olive oil over the surface to help keep the pesto fresh.
