Put Gochugaru Chili Flakes To Work

Easiest Kimchi

Makes 1 quart jar

If you're trying gochugaru for the first time, this easy kimchi is a great place to start.

Ingredients

  • 1 Napa cabbage, cut into 2 inch strips
  • 1/4 cup kosher salt
  • 5 cloves garlic, minced
  • 3 tbsp fresh ginger root, minced
  • 1 bunch scallions, cut into 2 inch pieces
  • 2 to 3 small carrots, cut into 1 inch matchsticks
  • 1 medium Asian radish, grated
  • 1 tsp demerara sugar
  • 3 tbsp spring water
  • 4 tbsp gochugaru chili flakes

Instructions

  1. Mix the cabbage with the salt and let stand for 1 hour.
  2. Rinse well, drain, and pat dry.
  3. Combine with the remaining ingredients and mix thoroughly.
  4. Pack tightly into a quart jar, leaving the lid slightly loose while fermenting for 2 to 5 days.
  5. Burp the jar daily, then refrigerate once fermentation is complete.
