What We tell customers about vietnamese cinnamon

Vietnamese cinnamon is a cassia cinnamon, which is naturally higher in a compound called coumarin than Ceylon cinnamon is. For cooking and baking in normal amounts it's wonderful and widely used.

If you're taking teaspoons of cinnamon every single day for health reasons, Ceylon cinnamon is what we usually recommended for daily use, because of its very low coumarin. We carry organic Ceylon cinnamon in the shop for exactly this reason.

For everyday cooking, where you want cinnamon to be the star, this bold, flavorful one is what people reach for. When you need cinnamon to just assist and not star in a dish, Indonesian (Kortije) cinnamon is the right one

  • What to use it on

    Stir a pinch into oatmeal or yogurt and you'll notice the difference immediately.

    Add it to barbecue rubs or chili where you want the cinnamon to stand out instead of disappear.

    Mix it into softened butter with a little sugar for cinnamon toast that tastes like it came from a neighborhood bakery.

    Add a pinch to your coffee grounds before brewing, fold it into homemade whipped cream, or sprinkle it over roasted sweet potatoes.

  • How the pros use it

    Bloom it in warm butter or ghee for about 30 seconds before adding your other ingredients. The aroma alone tells you this is not ordinary cinnamon. Because it's naturally bold, start with a little less than your recipe calls for, and in oatmeal, applesauce, or warm cereals, stir it in near the end to keep more of its aroma.

Cinnamoney Curried Grilled Chicken

Serves 6 to 8

A great introduction to Vietnamese cinnamon, because the spice stays bold even alongside honey and curry.

Ingredients

  • 1 whole chicken, about 4 pounds, cut into pieces
  • 1/2 cup dry sherry
  • 1/3 cup honey
  • 2 tsp ground Vietnamese cinnamon
  • 1 tsp Everyday Curry Powder
  • 1 tsp garlic salt

Instructions

  1. Combine the dry sherry, honey, cinnamon, curry powder, and garlic salt in a small bowl.
  2. Coat the chicken evenly with the marinade and refrigerate for at least 1 hour or overnight.
  3. Prepare a medium-low grill (300°F to 325°F). Because of the honey, watch carefully to prevent burning.
  4. Grill until the chicken reaches an internal temperature of 165°F, about 12 to 15 minutes per side.
