Hearty Fisherman's Stew

Serves 4 to 6

A comforting seafood stew with shrimp, white fish, and butter beans, built around Coastal Cali Seafood Seasoning.

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 1 stalk celery, chopped
  • 1 red bell pepper, seeded & diced
  • 1 large carrot, peeled & diced
  • 3 cloves garlic, peeled and minced
  • 2 to 3 tbsp Coastal Cali Seafood Seasoning
  • 1/2 cup dry white wine
  • 4 medium tomatoes, chopped
  • 1/4 tsp kosher salt
  • 1/2 tsp aji amarillo chile powder
  • 1 1/4 cups water, divided
  • 2 cups veggie broth
  • 1 can butter beans, drained & rinsed
  • 1 lb cod, tilapia, or halibut
  • 1 lb medium shrimp, shells removed & deveined
  • 3 cups cooked rice (we love brown basmati)
  • 1/8 tsp Tellicherry pepper, ground

Instructions

  1. In a dutch oven or soup pot, heat the olive oil on medium-high heat.
  2. Add the onion, celery, bell pepper, and carrot. Saute until the vegetables begin to soften, about 5 to 8 minutes.
  3. Add the salt, pepper, and garlic, and cook another 2 to 3 minutes. Stir in the seafood seasoning and aji amarillo powder, then the white wine. Add the tomatoes, reduce heat to a simmer, cover, and cook about 5 minutes.
  4. Add the veggie broth and butter beans, and continue cooking for another 15 to 20 minutes. Add the remaining 1 cup of water as needed to reach your desired consistency.
  5. Add the fish and shrimp, cover, and cook an additional 8 minutes, or until the fish is fully cooked.
  6. Remove from heat and serve over the cooked rice. Enjoy!
