Here's the advice we give customers who want to use it, especially around the holidays.

Make the herb butter the night before. Mix 1 to 2 teaspoons of the rub into 2 tablespoons of softened butter, cover, and refrigerate overnight. Before roasting, gently loosen the skin over the turkey or chicken breast and spread the butter underneath. As it cooks, the butter bastes the meat from the inside while the herbs and lemon work through it. This is what we do every Thanksgiving.

    Roast chicken first, worked over the skin and under it.

    Turkey, for the same reasons and on the same schedule.

    Potatoes and roasted vegetables in the pan underneath, where they catch the drippings.

    Stirred into pasta sauce or mac and cheese, which is where people are surprised it goes.

The Perfect Roast Chicken

Serves 4-6

A whole chicken rubbed with garlic, butter, and Rotisserie Chicken Club Rub, then roasted until golden for a rotisserie-style bird straight from your own oven.

Ingredients

  • 4-5 pound whole broiler chicken
  • 3-4 cloves garlic, minced
  • 3 tbsp melted butter or olive oil
  • 3 tbsp Rotisserie Chicken Rub
  • 1/2 tsp Pacific flake salt
  • 1/2 tsp Tellicherry pepper

Instructions

  1. Preheat oven to 375°F.
  2. Rinse the inside of chicken; pat dry with paper towels. Twist wing tips under back. Place chicken, breast side up, on a rack in a shallow roasting pan.
  3. Brush with melted butter or olive oil; rub garlic over chicken.
  4. Season the chicken with salt and pepper. Rub the Rotisserie Chicken Rub onto chicken.
  5. Roast, uncovered, for 75 to 90 minutes or until drumsticks move easily in their sockets and chicken is no longer pink (180°F).
  6. Remove chicken from oven. Cover; let stand for 10 minutes before carving.
  7. Enjoy!
